Freeze Ahead Slow Cooker Chicken Fajita Wraps

I've had a lot of interest in me keeping track of my recipe adventures somewhere for the world to see so this is the first of many meals to come. I've found a lot of recipes that I like, some are easy some take a little more work but right now I'm into the freeze ahead meals because the idea is genius and the food is delicious! With the advice from my sister I've been taking pictures of every meal I make and if it's good I keep it but please keep in mind that I'm no food photographer so all of them might not look that fabulous but they sure taste good. :) I'm also kind of a calorie and macronutrient freak so I've calculated those for each meal as well. Hope you enjoy this one, we just tried it last night and it as awesome!

Slow Cooker Chicken Fajita Lettuce Wraps: Servings 6-8 adults
Ingredients:
6 quart slow cooker (4 would work but it'll be full!)
3-4 medium sized peppers (any colors)
1 can whole kernel corn (drained)
1 can black beans (rinsed)
5 skinless bone-in chicken thighs (bone adds flavor)
1/3 cup water (add day of, not in freezer bag)
1 head lettuce
2 cups brown rice (cooked)
1 one gallon freezer bag
1 one quart freezer bag

Homemade Fajita Seasoning: Recipe Source
2 Tbsp Chili Powder
1/2 Tbsp Salt
1 Tbsp Paprika
1 Tbsp Sugar
2 tsp chicken boullion
1 tsp onion powder
1/2 tsp garlic powder
1/2 tsp cayenne pepper
1/2 tsp (or more!) crushed red pepper flakes
1 tsp cumin

Directions:
1)Write out recipe and directions on freezer bags.
2)Wash and cut up peppers into 2-4 inch strips. Add to quart size freezer bag.
3)Add corn, beans, full seasoning recipe and chicken to one gallon freezer bag, freeze flat in freezer.
Day Of: Move gallon size bag into the fridge the night before or if you forget like me thaw it in cool water the morning of, enough to just get it out of the bag. Add it to the crock pot using a basting brush or paint brush to get the rest of the seasoning out of the bag. Add 1/3 cup water and cook on HIGH 4 hours followed by 1 hour on LOW. Make sure to turn it at least once if frozen.
4)1 hour before it's done take out chicken thighs one by one and remove bones and cartilage. Return chicken, add frozen peppers and turn to low.
5)half hour before add in cooked brown rice, I use the minute kind. Remove lettuce leaves, wash and pat dry. Spoon fajita mixture onto lettuce, roll up and enjoy! :) Add sour cream and salsa if you'd like.
NOTE: You can add peppers in the beginning but they may become soggy.
